Pork Meatballs and Noodle Soup

Pork Meatballs and Noodle Soup

It’s been really chilly here so I decided to make a yummy soup to warm us up. The best thing about this soup is that my 8 year old daughter really loved it!

Hope you enjoy it as much as we do!

  • 1 lb ground pork
  • 1/4 cup panko breadcrumbs
  • 1 large egg, beaten
  • 1 tbsp water
  • 3 cloves garlic, minced (fresh adds more flavor)
  • 1 tbsp grated ginger (fresh adds more flavor)
  • 1/2 tsp crushed red pepper flakes (optional)
  • salt
  • ground black pepper
  • 12 cups low-sodium chicken brother
  • 1/4 cup low-sodium soy sauce
  • 1 tsp rice vinegar
  • 12 oz package No Yolks Extra Broad Noodles
  • 4 cups packed baby spinach
  • 3 green onions, thinly sliced (optional)
  • Lime wedges, for serving (optional)

Directions

In a large bowl, add ground pork, panko, egg, water, garlic, ginger, crushed red pepper flakes and season with salt and pepper. Mix until well combined and shape into 28 meatballs. Transfer to a parchment-lined baking sheet and refrigerate for 20 mins.

In a large pot, combine chicken broth, soy sauce and rice vinegar. Bring to a boil. Add the Noodles and gently drop in meatballs. Reduce heat to a simmer, stirring occasionally until noodles are tender and meatballs are cooked thoroughly, about 15 minutes.

Stir in spinach until wilted and remove from heat.

Serve in bowls garnished with green onions and lime wedges.

California’s Great America Winterfest 2017

California’s Great America Winterfest

California’s Great America Winterfest was transformed into a winter wonderland on November 24th. It was the start of Winterfest and the beginning of a wonderful evening for us. Truly a family-friendly event.

My daughter and I started the night off with a little ice skating on Snowflake Lake in front of the Carousel Colombia. Needless to say we both needed the helper to get around the ice without falling onto our bottoms. It was great fun but after an hour on the ice I was ready to slip back into my shoes and walk around a little bit to see all the decorations before the tree lighting ceremony.

We grabbed some popcorn, found a spot fairly close to the stage and waited for the singing and dancing to begin. Soon enough the cast came running out onto stage dressed in festive clothes. There to light the tree was San Francisco 49er Joe Staley and his family! We couldn’t wait for him to push the button and see that beautiful 65 foot tree shining brightly!

     

There was so much to see and do that it was hard to decide what to do next, so we ended up walking down Candy Cane Lane and seeing Ms. Candy Cane taking pictures with many of the guests. There was so many delicious looking buildings, seats, tables, etc. Yes I did say that! Good thing they weren’t real or they’d have to replace them, since people would be stopping and eating them.

Onward to Charlie Brown’s Christmas Town at Planet Snoopy! Here we enjoyed a few of the younger kids rides and listened to A Peanuts Guide to Christmas that was happening on the stage. I loved watching the little kids with their wide eyes listening to the characters and smiling.

The Great Dickens Christmas Fair & Victorian Holiday Party

Under colorful swags of Union Jacks and boughs of holly, The Great Dickens Christmas Fair & Victorian Holiday Party returns for five weekends amid the theatrically-lit halls of the historic Cow Palace (2600 Geneva Ave., Daly City, CA) on Saturdays and Sundays (as well as the Friday after Thanksgiving) from November 18 through December 17, 2017, to offer visitors a delightfully immersive holiday experience unlike any other.

An annual tradition for Bay Area natives and visitors alike, The Great Dickens Christmas Fair’s 800 Victorian characters, from waltzing royals to scrappy chimney-sweeps, populate over three acres of twilight-lit shops, pubs, stages, and dance halls. This season’s event will debut an expansive new children’s area, new juried crafts, and the premiere of Gilbert and Sullivan’s operetta “Trial By Jury” – the perfect setting to revel in the joy of the season!

The Great Dickens Christmas Fair was originally produced by Ron and Phyllis Patterson in 1970, inspired by their successful Renaissance Pleasure Faire, which they brought to the San Francisco Bay Area during the Summer of Love in 1967. The next generation, Kevin and Leslie Patterson now joined by their grown sons Andrew and Michael, have produced the Fair since 2000, continuing a 50-year family tradition of deeply immersive, historically authentic environmental theater.
